Creamy Garlic Mashed Potatoes

Ingredients

  • 1kg potatoes, peeled and chopped

  • 3 garlic cloves, crushed

  • 60g butter

  • ½ cup warm milk or cream

  • Salt and cracked black pepper

Method

  1. Add potatoes and garlic to your cast iron pot and cover with cold water.

  2. Bring to a gentle boil, then reduce to a simmer and cook until fork-tender.

  3. Drain well and return potatoes to the pot.

  4. Add butter and mash until smooth.

  5. Slowly stir in warm milk until creamy. Season to taste and serve.

  • 1kg beef or chicken bones

  • 1 onion, quartered

  • 2 carrots, chopped

  • 2 tbsp apple cider vinegar

  • 2 bay leaves

  • Salt to taste

  • Water to cover

Method

  1. Place all ingredients into your cast iron pot and cover with water.

  2. Bring to a gentle simmer, then reduce heat to low.

  3. Cover and simmer for 6–12 hours, skimming occasionally.

  4. Strain and season to taste. Store or freeze as needed.

Method

  2. Cook onion until soft, then add garlic and cook briefly.

  3. Stir in tomatoes and reduce heat to low.

  4. Simmer uncovered for 30–45 minutes, stirring occasionally.
